Tahini Sauce Recipe – Gonzo cooking, How To Make Kickass Tahini Sauce

There’s nothing worst to a hungry man then to stare at an empty fridge. I bet you know the feeling right?.
Well, for a person like me, it’s just an excuse to come up with something new, or most commonly known as “what’s ever in the fridge” recipe.

So few weeks ago I went to my sister’s place and found a fridge that had echoes in it.  When  I was a kid, whenever we would complain to my mom that there’s actually nothing in the fridge her answer was the same ” the fridge is not empty, rather have many raw materials”, Which was true. but as kids we didn’t really like cooking and wanted to eat the second we got the craving for something.

So there I was, standing in front of a “1/2 full” fridge, thinking to myself…what on earth could I make from almost nothing?.  Well, I took a second peak and saw organic tahini, chilies and …other random stuff.  It took me 2 seconds to come up with this improvised recipe and it beats any Tahini sauce recipe i’ve tried so far. That’s what’s Gonzo cooking is all about – improvisation.

sometimes we kinda get stuck with the same recipes we like so much that we forget that cooking is like a mini chemistry lab. Just mix a few things together and see what comes up. The basic rule of thumb is: whatever’s popular is not.

You can use the following recipe as a paste or as some topping for meat or salads (words great with lamb or beef).

Spicy Tahini Sauce Recipe

  • 3 pickled chilies
  • 3 spoons of organic tahini (try to get the Ethiopian kind  since it’s rich in flavor)
  • 2 pinches of salt
  • bit of olive oil
  • lemon juice from 1/2 a lemon
  • 1 tomato (it adds great flavor and gives it a wonderful color!)
  • 3-4  tbs of waterthe recipe goes like this …..toss everything into a blender/food processor and eat it  with a warm pitta…as simple as that.
